Slow Cooked Beef Curry

Slow Cooker Beef Curry served over Cauliflower Fried Rice

As you can probably tell, I’m a big fan of the crock pot slow cooker.  This meal is insanely flavorful with salty spice and melt-in-your-mouth beef.  The whole meal is guilt-free when served over a hearty bed of cauliflower rice.  This one is meant to be tailored from mild to melt-face spicy, depending on your tastes!  Let’s Grind!

Beef Curry Ingredients:

2 lbs of beef sliced into 1/2″ pieces

1 can of Coconut Milk

Thai Red Curry Mix (appx 4-5 tbsp)

1 bushel of Green Onions (chopped)

Juice from 2 limes

3 tbsp fresh grated Ginger Root

2 cloves of Garlic (minced)

3 Chinese Eggplants

1 tsp Cumin

1 tsp Chili Powder

1/2 tsp Sea Salt

Beef Curry Preparation:

In a hot skillet, brown the meat for about 3-5 minutes.  You don’t want to cook it all the way through.  Once browned, place the meat into the crock pot with the rest of the ingredients.  Mix the curry sauce as needed, depending on which kind you brought.  Also be careful with the Thai Chili Peppers, they’re REALLY hot.  Once all the above ingredients are in the crock pot, cook on the low setting for 6-8 hours, or until the meat is easily shreddable.  When it falls apart, its done!  Make your cauliflower fried rice below, then serve the curry over a nice bed.  Garnish with some fresh squeezed lime and some chopped green onions.

Cauliflower Fried Rice

2 large Cauliflower

1 Red Bell Pepper

2 Eggs

1 Yellow Onion

1/2 cup Coconut Milk

Minced Garlic

Cauliflower Fried Rice Prep:

Remove the leaves and stem from the cauliflower and cut it into manageable chunks.  Place the chunks into boiling water for about 10 minutes or until soft.  Drain the water well, then place 1 tsp of grass fed cow butter or ghee into the pot.  Pour in 1/2 cup of Coconut Milk.  With a potato masher, mash the cooked cauliflower down to a “rice like” consistency.  Add in some sea salt and pepper and mix well.  On a hot skillet, melt 1 tsp of Coconut Oil and add the onions, some garlic, and the red bell peppers.  Once cooked down to soft, add the cauliflower.  Cook until the cauliflower is browned, then crack two eggs into the entire mess.  Stir well, cooking the eggs into the mixture.  Once the eggs are cooked, remove from heat.  This is your fried rice mixture that will serve as a bed for the main entree.
