Primal Granola

Old habits die hard.  Before going primal with my diet, I used to eat granola like it was going out of style.  This variation on an old favorite is sure to provide you with a good dose of healthy fats, carbohydrates and a bit of proteins to fuel your morning.  Or snack on it throughout the day!  Either way, you’ll probably make this a weekly recipe after trying the first batch.

Ingredients:

2 Cups of Almond Meal

¾ Cup Coconut Oil (melted)

1/3 Cup Honey or Agave Nectar

2 tsp Cinnamon

3 tsp Vanilla Extract

1tsp Sea Salt

1 ½ Cup Shredded Coconut

1 Cup Almonds

½ Cup Shelled Sunflower or Pumpkin Seeds

1/2 Cup Raisins

½ Cup Cashews

PREPARATION:

Mix all ingredients in large mixing bowl until the coconut oil coats it all.  Put all ingredients in a blender and give short bursts of power just to chop the ingredients a little.  You don’t want it completely blended like a food processor would do.  You want some chunks!  Pour the mixture on a baking sheet and place into the oven at 275-300F for about 25 minutes.  Toss it once or twice during the baking process.  Remove it and allow it to cool.  Use it in a bowl with some berries and a bit of greek probiotic yogurt.  Breakfast!  Insanely healthy dose of good fats that your body craves.  The best part:  No grains to bog down your morning.
