Pesto Arugula Salad

INGREDIENTS

1 package of baby arugula

1 red bell pepper (chopped fresh)

1 package of grape tomatoes (cut in half)

1 medium sized eggplant (cut into large coins)

1 bushel of green onions (chopped)

1 bushel of basil

1 clove of garlic

1 avocado (cubed)

1 package of lean Italian turkey sausage links

½ cup of Olive Oil

Juice from ½ lime

½ cup of raw almonds (may substitute cashews or pine nuts)

A pinch of cayenne pepper (optional)

Sea Salt & Pepper to taste

 

PREPARATION:

In a large mixing bowl, place the whole bag of arugula, red bell pepper, tomatoes, green onions and avocado. On the grill, cook the sausage links and the eggplant coins. Once they are cooked, take them off of the grill and cut the sausage into coins and chop the eggplant into cubes. Set them aside for now and don’t mix them with the salad until you’re ready to serve.

To prepare the pesto sauce, place the olive oil, lime juice, basil, almonds, garlic, cayenne and sea salt/pepper (to taste) into a blender and blend well.

Once the pesto is made, put the eggplant and sausage into the salad mixture. Pour in the pesto sauce and toss well. Serve immediately.
