Mini Pesto Calzones
Cheat Meal: Mini Pesto Calzones
1 roll of Pilsbury Pizza Crust (large)
1 small carton of whole milk ricotta cheese
1/4 lb of ham
1/2 cup of grated mozzarella cheese
1/2 cup of pesto sauce (fresh pesto recipe below)
1 cup olive oil
1/4 cup macadamia or pine nuts
1 clove of garlic
1 large handful of fresh basil
1 tsp lime or lemon juice
Blend all ingredients well, serve.
Mince the ham to a very fine consistency. Add the ricotta, ham, pesto sauce and mozzarella into a mixing bowl and mix well. Lay out the pizza crust onto a cutting board. You may need to spread out some flour on the cutting board so it doesn’t stick. Cut the pizza crust into 6 equal squares. Add a heaping spoonful of the ricotta mixture to the center of each square.
To wrap the calzones: Take one edge of the dough and flap it over the mixture you placed. Take the opposite edge of the dough and flap it over the layer you just flapped. Fold in the remaining edges and tamp those edges down firmly with a fork to seal. Repeat for the other calzones.
Place the calzones on a cookie sheet with some foil, leave uncovered. Cook at 400F for about 15 minutes, or until the top is golden brown. Allow calzones to cool before diving in.
