Mango Chicken & Slaw

BBQ Chicken with Mango Chutney and Summer Slaw

Summer’s here in Southern California and as much as I love my crockpot, I needed something refreshing to kick off the season with a bang.  This recipe blends salty and sweet in a very tropical way.  Big elbow nudges of fruit and a fair share of healthy fats and vegetables to fuel your engine are incorporated into this creation.  This recipe is much easier than it looks, it just requires lots of chopping! It’ll go GREAT with a Cadillac Margarita by the pool.  Aaaaaaand now I’m thirsty.


BBQ Chicken:

Boneless, skinless Chicken Breasts (free range chickens are optimal)


1 tsp Paprika
Pinch of Cayenne Pepper
½ tsp Sea Salt
½ tsp Pepper
½ tsp Ground Ginger
1 Lime

Mango Chutney:

3 ripe Mangos (peeled, de-seeded)
½ cup chopped fresh Cilantro
½ cup chopped fresh Green Onion
½ cup chopped Red Bell Pepper
1-2 Avocados (sliced into chunks)
1 chopped fresh Jalepeno (if you like spicy)
½ tsp Paprika
Pinch of Cayenne Pepper
½ tsp Sea Salt
½ tsp Pepper


Summer Slaw:

1 head of Cabbage (chopped)
1 chopped Red Bell Pepper
1 chopped Red Apple
1 chopped Pear
2-3 shredded Carrots
½ -1 cup Raisins
½ cup chopped Green Onions
1 cup Apple Cider Vinegar
½ cup First Cold Pressed Olive Oil
¼ cup Raw Honey or Raw Agave Nectar
Sea Salt and Pepper to taste
Pinch of Cayenne

Mango Chutney Preparation:

Place the mangos, jalepeno, paprika, cayenne pepper, sea salt and pepper into a blender.  Blend until the mixture is a thick liquid.  Gently mix the mango liquid from the blender into a bowl with the rest of the ingredients (cilantro, green onions, red bell pepper, avocado).  Being gentle while you mix will allow the avocado chunks to stay intact.  Chill until ready to serve.  Chutney is served over the top of your BBQ Chicken.

Summer Slaw Prepartion:

Place all chopped veggies and fruits into a large bowl.  Pour in the vinegar, honey/agave and the seasonings.  Toss well until equally coated.  Chill before serving.
Chicken Preparation:

Rinse, remove excess fat and pat chicken dry.  Coat the chicken well with the above seasoning.  Cook on a hot grill and squeeze the lime on the chicken periodically as it cooks.  Once done, place into foil and wrap tightly until ready to serve.  When ready to serve, the Mango Chutney is laid over the top of the chicken.  Hee hee, I said “laid”.
