G4G: Episode 1

Grinds 4 Gamers:  The Pilot Episode (Cowboy Pie)

Thanks for joining me on the pilot episode of Grinds 4 Gamers!  We’re making Cowboy Pie…..And its HEALTHY?  Whaaaaaaat?  You heard me, partner.  Just watch the show!  It’s a bit rough.  But I’m working on the quality.  Big ups to Cody, MOG’s Video guy for blasting out the bumpers, music and effects.  They look sick!  Also big thanks to MOG’s JB for the help with the G4G logo.

Cowboy Pie

Ingredients:

Cauliflower
Red Onion
Carrots
Poblano Peppers (Green, Anaheim, Red will also work)
Sweet Potato (not the orange ones, that’s a yam)
Lean Ground Beef (I buy the grass-fed stuff. You can also use ground pork or turkey)
Garlic
Bacon
Olive Oil
Coconut Milk
Tomato Paste
Peas
Grass-Fed Cow Butter (Kerrygold is what I use)
Egg

Preparation:

Chop the peppers, red onion and garlic. With a cheese grater, shred the carrots and sweet potato. Slice the bacon into small pieces. Clean the cauliflower by taking off all of the greenery attached. Cut into smaller chunks and wash thoroughly. Boil the Cauliflower until soft and drain all the water from the pot. Add in some grass-fed cow butter, sea salt, pepper. Grab a potato masher. Mash the cauliflower to a consistency similar to chunky mashed potatoes. Add in the sweet potato shreds. Toss it like a salad. Make sure the salt, pepper, butter and coconut milk are mixed in thoroughly. With some olive oil, sautee the garlic, onions, bacon, carrots, ground meat, peppers until cooked. Add sea salt and pepper or other seasonings as you prefer. Mix in tomato paste so it is distributed evenly throughout the mixture.  Add the meat mixture into the pyrex dish and pat down. Add the peas to the top of the meat mixture and distribute evenly. Add the cooked cauliflower, shredded sweet potato mixture on top of the meat and peas. Pat it down. Cover the pyrex with foil.

Bake at 400F for about 45 minutes or until the sides are bubbling well. Remove the foil from the top and kick on the broiler. Let the pie broil for about 5-10 minutes, or until the top is beginning to brown. Remove from the oven, let cool and serve. Top with chopped green onions or fresh chopped jalepenos if you prefer! Boom. Cowboy Pie, the healthy way.
