Good Fat Salad

Looking for something tasty for lunch?  This recipe has every facet of health and nutrition, tossed into a succulent little salad! As a matter of fact, I made a video on how to make the dressing. This is a firehouse favorite around these parts and it’s very easy to make. So here we go …

Good Fat Salad

1 Red Bell Pepper

1 Pablano Pepper

Fresh Jalepeno or Habanero (quantity depends on heat level desired)

1 Bushel of either Basil or Cilantro (depends on flavor desired, Mexican or Italian)

2 Fresh Garlic Cloves

¾ Cup of Olive Oil

10 Almonds

1 Lime

½ Onion

Salt to Taste

1 Avocado

 

Directions:

Roast red peppers and pablanos then peel & place into blender. Pour Olive Oil into blender. Mince Jalepenos or Habaneros, Basil or Cilantro, garlic cloves, avocado and onion and put into blender. Drop in the almonds and squeeze the limes into the blender. Blend to desired consistency, a bit chunky is best because you can feel the crunch of the almonds. Add salt to taste.

 

Salad Preparation:

Lay a bed of Spring Greens, Spinach or Arugula on your serving plate (or a mixture of all). Chop and Grill or lightly sauté vegetables of your choice, Zucchini, Squash, Red Bell Peppers, Eggplant, or Mushrooms work well. Saute or barbeque a lean meat of your choice (grass fed beef, free-range chicken, wild caught fish). Flavored chicken sausage is one of my favorites. Cube the meat. Lay the grilled veggies and meat onto the bed of greens and spoon the dressing on as desired. Eat immediately.
