Eggless Scramble


Don’t feel like eggs? Try this eggless mixture.  These good carbohydrates and protein boost will certainly fuel your morning without causing that dreaded insulin spike!


1 Sweet Potato

½  Sweet Onion

½ lb Ground Turkey or Beef

4 cups of Spinach or Kale

½ tsp Cinnamon

2 tsp Olive Oil or Coconut Oil for cooking

Sea Salt to taste


Chop the sweet potato and onion into bite-sized pieces.  Chop the Kale or Spinach into small strips.  Place the olive oil in a frying pan and heat on medium-high.  Drop in the onions, cinnamon, sea salt and sweet potatoes and cook for about 5-7 minutes.  Put in the meat and break it up as it cooks.  Mix it in with the sweet potatoes and onions.  Drain any excess fluid.  Once the meat is cooked and the sweet potatoes are soft, put in the kale or spinach.  Mix all ingredients well.  The kale or spinach will cook quickly.  Serve immediately, or store it for tomorrow!  It makes an excellent breakfast at the office.

NOTE:  Tons of different combinations you can make here for an eggless breakfast!  Just grab your favorite ground meat and mix it in with chopped vegetables like:  Zucchini, Squash, Carrots, Peppers, Asparagus, etc.  Serve it with a side of avocado and an apple.  BOOM!  Perfectly rounded meal.  It also works well as lunch and dinner!
