Egg Cupcakes

EGG CUPCAKES (for your cakehole):

This one is so crafty.  If you’re on the go and you need something that you can just pop in your cake hole, this might work well.  Here we go.

Grab your Gear:  A muffin tin and muffin wrappers


1 dozen eggs

1 zucchini

1 chopped red bell pepper

1 bushel of green onions

½ lb lean ground meat (sausage, turkey, beef)

1 sweet potato

Salt & Pepper to taste


Place the eggs into a bowl and whisk, mixing in the salt and pepper.  Use a cheese grater to shred the zucchini and sweet potato.  Chop the green onions and red bell pepper.  Cook the onions, red bell pepper, grated zucchini, grated sweet potato and ground meat in a frying pan.  Once the mixture is cooked, spoon a portion into each muffin wrapper cup that you’ve placed in the muffin tin.  Pour in a portion of the whisked eggs into each tin.  Be aware that when you cook these, the eggs will rise, so only fill to about half way!  Place the muffin tin into the oven at about 350F -375F for about 12-15 minutes, or just long enough for the eggs to not be snotty.  Let them rest so they don’t melt your face before serving.   You can pack them for tomorrow, too.  Top with some Tapatio, Tabasco or Cholula Hot Sauce.
