Crock Pot Spicy Chicken Tikka Masala

INGREDIENTS:

8-10 Chicken Thighs

1 Large Can Crushed Tomatoes

1 Can of Full Fat Coconut Milk

2 tsp Coconut Oil or Clarified Butter (Ghee)

2 tsp Garam Masala

1 tsp Cayenne Pepper

1 tsp Cumin

1 tsp Sea Salt

1 tsp Crushed Red Chili Pepper

3 Garlic Cloves (minced)

1 tsp Fresh Ginger (grated)

1 Bushel of Cilantro (chopped)

1 Large Yellow Onion (chopped)

 

I’m a big fan of Indian food, but I’ve never really attempted to prepare my favorite Indian dish: Chicken Tikka Masala. Here’s a much healthier variation of one of my all-time favorites!

 

PREPARATION:

Wash and trim the chicken of excess fat, then pat dry. Put a nice dusting of Garam Masala on the chicken. Heat the clarified butter or coconut oil in a skillet with about half of the minced garlic and grated ginger, then place the chicken in the hot skillet. Cook the chicken just long enough to brown the sides, then put all chicken in the crock pot on the “LOW” setting. Cover the chicken with the chopped onion.

In a medium sauce pan, heat the remainder of the coconut oil or ghee over medium heat and sautee the rest of the garlic and ginger. Pour in the crushed tomatoes and coconut milk. Add all the rest of the spices (chili pepper, sea salt, cumin, cayenne and garam masala powder). Stir well and heat until boiling, then pour the mixture into the crock pot over the chicken and onions.

Cook the mixture in the crock pot on “LOW” for 3-4 hours, or until the chicken is cooked fully cooked.  Serve over cauliflower rice or brown rice and garnish with cilantro. I also like to roast some vegetables for a side dish, such as sweet potatoes, onions and beets.
