Black Friday Turkey Soup

Not sure what to do with that left over turkey? I got ya covered! Black Friday usually comes equipped with a couple of definites for me. First, I definitely don’t want to go shopping. Those people are nuts and I’m not interested in getting a shiner over a discount item. Second, after yesterday, I need some clean food. There’s no doubt I’m all-in on my Thanksgiving feast and this year was no different. So here’s a fantastic way to incorporate your (now drying out in the refer) turkey leftovers into a cleansing, healthy soup to get you back on the right track.

Ingredients:

4-5 cups leftover turkey, shredded or chopped
2 Zucchini, cut into chunks
1 Yellow Onion, chopped
5 Garlic cloves, minced
4-5 Carrots, chopped
1 Yam or Sweet Potato, cut into chunks
1/2 lb Brussel Sprouts, halved
1 bushel of Kale, chopped
1 bushel of Cilantro, chopped
1 box of Mushrooms, sliced
3 Celery stalks, chopped
3 Jalepenos, chopped
2 Pasilla peppers, chopped
2 Large boxes of Chicken Broth
1 Large can Diced tomatoes
Seasonings to taste: Paprika, Cayenne, Sea Salt, Pepper, Thyme,
1 Avocado for garnish

Preparation:

In a large pot, saute the onions, garlic and celery with a few tablespoons of olive or coconut oil. When the onions soften, pour in the chicken broth and diced tomatoes. Mix well and add in your spices, then bring the mixture to a boil. Once boiling, add in all vegetables and the turkey. Mix well and bring to a boil. Once boiling, lower heat to a simmer for 20-30 minutes or until the sweet potatoes and carrots are cooked through. Serve with avocado slices as a garnish.

Note: This recipe makes a lot of food. Feel free to cut the ingredients in half for a more manageable batch!
