Bacon Mangocado Sandwiches

Brace yourself my friends.  Now I’m pretty confident that I can make some pretty damn good tasting meals.  But this little gem of a recipe will create absolute insanity in your face.  If you can picture butter-soaked angels flying around in your mouth you’ll be pretty close to understanding how amazing this dish tastes.  It’s also seriously easy to make.  Without further adieu, I present to you, Bacon Mangocado Sandwiches.

Ingredients:

8 Thick-Cut Bacon Strips (makes 4 sandwiches)
1 Ripe Mango
2 Ripe Avocados
1/2 tsp Chili Powder
Sea Salt/Pepper to taste

Preparation:

In a hot skillet, cook up your bacon.  As the bacon cooks, slice the mango into thin, long slices.  Place your avocados in a mixing bowl and add the chili powder and sea salt/pepper to taste.  Mix into guacamole.  Once the bacon is done, be careful not to break the strips.  Use one piece of bacon as the bottom of your sandwich.  Spoon on a healthy portion of the guacamole onto the bacon.  Place mango strips on top of the guacamole and top with another piece of bacon.  Serve to your new best friends.

Note:  Make sure you serve these sandwiches with some veggies to complete your healthy plate!
