Alfredo Chicken Pasta

Cheat Meal: Alfredo Chicken Pasta

 

INGREDIENTS:

Pasta:

1 box of bow tie pasta

1 cup of ham cut into chunks

1/2 yellow onion

1/2 bag of organic peas

1 cup of chopped sun-dried tomatoes

2-3 barbecued chicken breasts

 

Alfredo Sauce:

1 1/2 cup heavy cream

1 1/2 cup whole milk

1-2 minced garlic cloves

Yokes from 6 eggs

1 cup fresh grated Romano cheese

1 cup fresh grated Parmesan cheese

Salt/Pepper to taste

 

Preparation:

Pasta:

Cook the pasta in boiling water with a few tablespoons of olive oil and some salt.  While the pasta is cooking, coat the chicken breast in olive oil, salt and pepper, then cook on the BBQ.  In a hot skillet, cook the chopped onion in a bit if olive oil, then add in the ham, peas and sun-dried tomatoes.  Toss well while the mixture cooks.  Once the pasta is done and drained, place the pasta in the same pan as all of the veggies and ham, toss well.  Chop the chicken into desired chunk sizes and toss it into the pasta mix.

 

Alfredo Sauce:

In a saucepan, cook the milk and heavy cream until it simmers.  Once it simmers, take off the heat and whisk in the 6 egg yolks.  Add salt, pepper and garlic and place back on heat, whisking continuously until the simmering returns.  Once it begins to simmer again, turn off the heat and continue to whisk until it thickens.

Spoon yourself up a plate and drizzle the Alfredo sauce on top, or mix it all in.  Its unbelievable!
